Description

Cucumbers in Spicy Peanut Sauce is a refreshing, crunchy side dish featuring sliced cucumbers tossed in a creamy, savory-spicy peanut sauce. Perfect as a quick, healthy snack or easy side dish.

Ingredients

Scale
  • 2 large English cucumbers, sliced into 1/3-inch thick rounds
  • 1/2 teaspoon salt
  • 1/2 cup chopped peanuts, toasted
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons peanut buttera
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried red chili flakes
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Salt the cucumbers: Place sliced cucumbers in a bowl, sprinkle evenly with salt, and toss to coat. Let them drain in a colander for 1 hour to remove excess moisture.
  2. Make the sauce: Whisk soy sauce, rice vinegar, peanut butter, honey, minced garlic, chili flakes, and black pepper in a bowl until smooth and creamy.
  3. Combine ingredients: Transfer drained cucumbers into a bowl, add toasted peanuts and chopped parsley, then pour the peanut sauce over. Gently toss to coat evenly.
  4. Serve the dish: Serve immediately for the best texture and flavor. If prepared ahead, refrigerate up to 8 hours, then bring to room temperature and toss again before serving.

Notes

  • For a milder flavor, reduce or omit chili flakes. Almond or cashew butter can replace peanut butter. For vegan-friendly, use maple syrup instead of honey. English cucumbers are ideal as they contain fewer seeds and water.
