Description
This easy mochi recipe will help you create delicious, chewy Japanese rice cakes at home with just a few simple ingredients. Perfect for those new to Japanese sweets or anyone craving a quick, homemade treat.
Ingredients
Scale
- 1 cup mochiko (sweet rice flour)
- 1/4 cup granulated sugar
- 1 cup water
- 1/2 cup potato starch or cornstarch (for dusting)
Instructions
- In a microwave-safe bowl, whisk together 1 cup of mochiko and 1/4 cup of granulated sugar.
- Gradually add 1 cup of water, stirring until the mixture becomes smooth and free of lumps.
- Cover the bowl with plastic wrap, leaving a small vent for steam to escape. Microwave the mixture on high for 1 minute.
- Stir the mixture well, then microwave again for 1 minute. Stir until the mixture becomes thick and translucent.
- Dust a clean surface generously with potato starch or cornstarch to prevent sticking.
- Carefully transfer the hot dough onto the dusted surface. Dust the dough with more starch and flatten it with your hands or a rolling pin.
- Once flattened, use a sharp knife or cookie cutters to cut the mochi into your desired shapes.
- Serve immediately for the best taste and texture.
Notes
- Use plenty of starch to prevent the mochi from sticking.
- Work quickly when handling the hot dough, as it cools down fast.
- Mochi is best enjoyed fresh; however, leftovers can be stored in an airtight container at room temperature for 1-2 days.
