Ingredients

  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs
  • 2½ cups zucchini (shredded)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8×4-inch loaf pans.
  2. Shred the zucchini using a box grater or vegetable shredder. Leave the skin on.
  3. In a medium bowl, combine the flour, baking soda, baking powder, ground cinnamon, and salt. Set aside.
  4. In a large bowl, whisk together the melted butter, brown sugar, granulated sugar, vanilla extract, and beaten eggs.
  5. Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Stir in the shredded zucchini and any optional ingredients like chocolate chips or walnuts.
  7. Divide the batter evenly between the two prepared loaf pans.
  8. Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean. Let it cool for 10-15 minutes before transferring to a wire rack.
