- 3/4 cup old-fashioned rolled oats
- 1 cup 4% cottage cheese
- 3 large eggs
- 2 teaspoons maple syrup
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon baking powder
Instructions
- Place all ingredients into a blender or food processor and blend until smooth.
- Preheat your waffle maker and coat it with non-stick spray.
- Pour about 3–4 tablespoons of batter onto each waffle section.
- Cook according to your waffle maker’s instructions until golden brown and crisp.
- Allow waffles to cool completely on a wire rack.
- Pre-freeze waffles on a parchment-lined baking sheet for six hours.
- Transfer pre-frozen waffles to airtight freezer bags, label, and store in the freezer.
- Reheat waffles in a toaster, toaster oven, or oven before serving.
