  • 4 boneless, skinless chicken breasts
  • 1 cup seasoned breadcrumbs
  • 1 cup grated Parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the Oven: Set your oven to 375°F and lightly oil a sheet pan or baking dish so the chicken doesn’t stick.
  2. Set Up the Breading Station: Prepare three shallow dishes—one with flour, one with whisked eggs and milk, and one with breadcrumbs mixed with half of the Parmesan and Italian seasoning.
  3. Prepare the Chicken: Place the chicken breasts between sheets of parchment paper or plastic wrap and pound them to even thickness using a meat mallet or rolling pin.
  4. Coat the Chicken: Dredge each chicken breast in flour, shaking off the excess, then dip into the egg mixture, and finally press into the breadcrumb mixture until fully coated.
  5. Sear the Chicken (Optional): Heat olive oil in a skillet over medium heat and cook each chicken breast for about 3–4 minutes per side until golden. Transfer them to the prepared baking dish or sheet pan.
  6. Add the Cheese Topping: In a small bowl, mix the remaining Parmesan, mozzarella, and minced garlic. Spoon the mixture evenly over each chicken breast.
  7. Bake to Perfection: Place the dish in the oven and bake for 20–25 minutes or until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165°F.
  8. Let It Rest: Allow the chicken to rest for about 5 minutes before serving to lock in juices and improve texture.

Notes

  • Use freshly grated Parmesan for the best flavor and melt. For added brightness, squeeze lemon juice over the finished chicken. Add red pepper flakes to the breadcrumbs for a spicy twist. This dish also works well with chicken thighs. If the cheese browns too fast, cover loosely with foil.
