- 1 cup seasoned breadcrumbs
- 1 cup grated Parmesan cheese (divided)
- 1 cup shredded mozzarella cheese

- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Instructions
- Preheat the Oven: Set your oven to 375°F and lightly oil a sheet pan or baking dish so the chicken doesn’t stick.
- Set Up the Breading Station: Prepare three shallow dishes—one with flour, one with whisked eggs and milk, and one with breadcrumbs mixed with half of the Parmesan and Italian seasoning.
- Prepare the Chicken: Place the chicken breasts between sheets of parchment paper or plastic wrap and pound them to even thickness using a meat mallet or rolling pin.
- Coat the Chicken: Dredge each chicken breast in flour, shaking off the excess, then dip into the egg mixture, and finally press into the breadcrumb mixture until fully coated.
- Sear the Chicken (Optional): Heat olive oil in a skillet over medium heat and cook each chicken breast for about 3–4 minutes per side until golden. Transfer them to the prepared baking dish or sheet pan.
- Add the Cheese Topping: In a small bowl, mix the remaining Parmesan, mozzarella, and minced garlic. Spoon the mixture evenly over each chicken breast.
- Bake to Perfection: Place the dish in the oven and bake for 20–25 minutes or until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165°F.
- Let It Rest: Allow the chicken to rest for about 5 minutes before serving to lock in juices and improve texture.
Notes
- Use freshly grated Parmesan for the best flavor and melt. For added brightness, squeeze lemon juice over the finished chicken. Add red pepper flakes to the breadcrumbs for a spicy twist. This dish also works well with chicken thighs. If the cheese browns too fast, cover loosely with foil.
