  • 4 slices provolone cheese (about 5 ounces)

  • 3/4 cup French fried onions

  • 3/4 cup water
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the Oven: Set your oven to 425°F and prepare a baking sheet by lining it with foil or parchment paper for easy cleanup.
  2. Assemble the Roll-Ups: Lay the tortillas flat on your work surface. Tear or cut the provolone slices into smaller pieces and spread them evenly in the center of each tortilla. Add a layer of roast beef over the cheese, then top with a generous sprinkle of French fried onions.
  3. Roll and Seal: Fold the sides of each tortilla inward, then tightly roll from the bottom up like a burrito. Dab a little olive oil on the edge to help seal it closed. Place each roll seam-side down on the baking sheet.
  4. Brush with Oil: Use the remaining olive oil to lightly brush the tops of the rolled tortillas. This helps them crisp and turn golden brown while baking.

  6. Make the Au Jus: While the roll-ups bake, combine the beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a small saucepan. Heat over medium heat until the mixture is warm and aromatic, stirring occasionally.

Notes

  • Make sure the roast beef is sliced thinly for easier rolling and even heating. Warm tortillas slightly in the microwave if they feel stiff—this prevents tearing.
