Ingredients

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) and line two baking sheets with parchment paper to prevent sticking.
  2. Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt until evenly combined.
  3. Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is pale and fluffy. This step helps create a light cookie texture.
  4. Add Wet Ingredients: Beat in the egg and vanilla extract until everything is fully incorporated and smooth.
  5. Combine the Mixtures: Slowly add the dry ingredients to the wet mixture, mixing gently until the dough just comes together. Avoid overmixing to keep the cookies tender.
  6. Add Strawberry Powder: Fold in the freeze-dried strawberry powder and optional food coloring. Mix until the color is consistent throughout the dough.
  7. Shape the Cookies: Roll the dough into 1-inch balls and space them 2 inches apart on the prepared baking sheets.
  8. Flatten Gently: Press down lightly on each dough ball with the bottom of a glass to form slightly flattened discs.
  9. Bake the Cookies: Bake for 10–12 minutes, just until the edges are lightly golden. The centers should still look soft but set.
  10. Cool the Cookies: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For more vibrant color, use gel food coloring. If your dough is too soft to handle, chill it for 30 minutes. You can add coarse sugar or colored sprinkles before baking for an extra festive look. Store in an airtight container for up to a week or freeze baked cookies for up to 2 months.
