Instructions
- Preheat oven to 350°F (175°C) and grease an 8½ x 4½ loaf pan with cooking spray.
- In a large mixing bowl, whisk together the flour, sugar, salt, baking powder, cinnamon, and nutmeg.
- In a separate bowl, mix together the eggnog, vegetable oil, eggs, vanilla extract, and rum extract.
- Gradually pour the wet ingredients into the dry ingredients and stir until combined. Avoid overmixing.
- Pour the batter into the prepared loaf pan and gently tap the pan on the counter to even out the batter.
- Bake for 65-70 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
- While the bread cools, prepare the glaze by whisking together the powdered sugar, eggnog, vanilla extract, rum extract, and nutmeg.
- Once the bread has cooled, drizzle the glaze over the top, slice, and serve.
Notes
- If the bread’s top is browning too quickly, cover it loosely with aluminum foil and continue baking until a toothpick comes out clean.
- This bread tastes even better the next day, so it can be made ahead of time.
- Store leftover bread in an airtight container at room temperature for up to 4-5 days. For longer storage, freeze the bread without the glaze.
- Mini loaf pans can be used for individual servings or as gifts. Adjust baking time to 45-50 minutes.
