Description

  • 1 cup granulated sugar

  • 1/8 teaspoon ground nutmeg (for glaze)


Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8½ x 4½ loaf pan with cooking spray.
  2. In a large mixing bowl, whisk together the flour, sugar, salt, baking powder, cinnamon, and nutmeg.
  3. In a separate bowl, mix together the eggnog, vegetable oil, eggs, vanilla extract, and rum extract.
  4. Gradually pour the wet ingredients into the dry ingredients and stir until combined. Avoid overmixing.
  5. Pour the batter into the prepared loaf pan and gently tap the pan on the counter to even out the batter.
  6. Bake for 65-70 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  8. While the bread cools, prepare the glaze by whisking together the powdered sugar, eggnog, vanilla extract, rum extract, and nutmeg.
  9. Once the bread has cooled, drizzle the glaze over the top, slice, and serve.

Notes

  • If the bread’s top is browning too quickly, cover it loosely with aluminum foil and continue baking until a toothpick comes out clean.
  • This bread tastes even better the next day, so it can be made ahead of time.
  • Store leftover bread in an airtight container at room temperature for up to 4-5 days. For longer storage, freeze the bread without the glaze.
  • Mini loaf pans can be used for individual servings or as gifts. Adjust baking time to 45-50 minutes.
