- 4-5 sprigs fresh thyme
- 2 tbsp light brown sugar
- 1 large egg (for egg wash)
Instructions

- Spread the fig preserves evenly over the pastry, leaving about an inch on each edge untouched.
- Crumble the goat cheese evenly over the fig preserves.
- Sprinkle the brown sugar and fresh thyme evenly on top.
- Carefully roll the puff pastry into a tight log, making sure the filling stays inside.
- Wrap the roll in parchment paper and place it in the freezer for 20 minutes to chill.
- Preheat the oven to 400°F (200°C).
- Remove the log from the freezer and slice it into ½-inch pinwheels using a sharp knife.
- Place the pinwheels on a baking sheet lined with parchment paper.
- In a small bowl, beat the egg and brush it over the top of each pinwheel to create an egg wash.
- Bake for 15-20 minutes, or until the pinwheels are golden brown and flaky.
- Serve warm, garnished with additional brown sugar and thyme.
Notes
- Ensure the puff pastry is fully thawed before using to avoid it cracking.
- Use a sharp knife to slice the pinwheels for clean cuts and even baking.
- Leftovers can be stored in an airtight container at room temperature or refrigerated for up to 2 days.
- If fig preserves are unavailable, apricot preserves can be used as a substitute.
