  1. Soak the Noodles: First things first, soak the rice noodles according to the package instructions. Typically, this involves placing the noodles in warm water for about 10 minutes until they’re soft. Drain them and set aside.
  2. Prep the Ingredients: While the noodles are soaking, prep your other ingredients. Slice the pork chops into bite-sized pieces. Dice the onion, mince the garlic, and chop the vegetables. The key to a quick stir-fry is having everything ready to go before you start cooking.
  3. Cook the Pork: Heat the canola oil in a wok or large sauté pan over medium-high heat. Once hot, add the pork slices, diced yellow onion, minced garlic, and soy sauce. Stir-fry the mixture for 3-5 minutes until the pork is browned and cooked through. Season with salt and pepper to taste.
  4. Add the Vegetables: Pour in the chicken stock to deglaze the pan, scraping up any browned bits. This step adds depth of flavor to the dish. Next, toss in the shredded cabbage, sliced carrots, and diced green onions. Cook everything together for another 3-5 minutes until the vegetables are tender but still slightly crisp.
