- 8 (8-inch) flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 Roma tomatoes, diced
- ¼ cup chopped fresh cilantro
Instructions
- Bake the tater tots: Preheat the oven to 400°F and lightly grease a baking sheet. Arrange the tater tots in a single layer and bake according to the package instructions until golden and crispy. Set them aside to cool.
- Cook the sausage: Heat olive oil in a large skillet over medium-high heat. Add the breakfast sausage, breaking it into crumbles as it cooks. Stir occasionally until browned, about 3–5 minutes. Drain any excess grease, leaving about 1 tablespoon in the skillet for the eggs.
- Scramble the eggs: Reduce heat to medium-low. Pour the beaten eggs into the skillet, stirring gently as they begin to set. Add half-and-half for extra creaminess and season with salt and pepper. Continue stirring until the eggs are soft and slightly firm but not dry. Remove from heat.
- Assemble the burritos: Lay each flour tortilla flat on a clean surface. Spread a thin layer of refried beans down the center. Top with a portion of tater tots, sausage, scrambled eggs, shredded cheese, diced tomatoes, and cilantro.
- Roll and seal: Fold in the sides of each tortilla and roll it up tightly into a burrito, ensuring the filling is well enclosed. Place them seam-side down on a baking sheet to prevent unrolling.
- Freeze or bake: If serving immediately, place the burritos in the oven at 400°F for 12–15 minutes until heated through. If freezing, wrap each burrito individually in plastic wrap or aluminum foil and store them in a resealable freezer bag.
- Reheating instructions: To reheat from frozen, microwave unwrapped for 4–6 minutes, turning halfway, or bake at 400°F for 30–40 minutes until warmed through.
