Instructions

  1. Bake the tater tots: Preheat the oven to 400°F and lightly grease a baking sheet. Arrange the tater tots in a single layer and bake according to the package instructions until golden and crispy. Set them aside to cool.
  2. Cook the sausage: Heat olive oil in a large skillet over medium-high heat. Add the breakfast sausage, breaking it into crumbles as it cooks. Stir occasionally until browned, about 3–5 minutes. Drain any excess grease, leaving about 1 tablespoon in the skillet for the eggs.
  3. Scramble the eggs: Reduce heat to medium-low. Pour the beaten eggs into the skillet, stirring gently as they begin to set. Add half-and-half for extra creaminess and season with salt and pepper. Continue stirring until the eggs are soft and slightly firm but not dry. Remove from heat.
  4. Assemble the burritos: Lay each flour tortilla flat on a clean surface. Spread a thin layer of refried beans down the center. Top with a portion of tater tots, sausage, scrambled eggs, shredded cheese, diced tomatoes, and cilantro.
  5. Roll and seal: Fold in the sides of each tortilla and roll it up tightly into a burrito, ensuring the filling is well enclosed. Place them seam-side down on a baking sheet to prevent unrolling.
