Ingredients
Scale
- 1/2 cup (113g) butter, melted and cooled slightly
- 3-4 medium nectarines (or apples or other fruit)
- 1 cup (136g) all-purpose flour
- 1 teaspoon (5g) baking powder
- Large pinch sea salt
- 2 large eggs
- 3/4 cup (150g) granulated sugar, plus more for finishing
- 3 tablespoons (44g) bourbon or rum
- 1 teaspoon (13g) pure vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch springform pan with butter or baking spray.
- Melt the butter gently over medium-low heat or in the microwave. Let it cool slightly.
- Prepare the nectarines by washing and cutting them into 1/2-inch pieces. Peel if desired.
- Whisk the eggs vigorously for 1-2 minutes until frothy. Add sugar and whisk for another 1-2 minutes until light and fluffy.
- Add bourbon and vanilla extract to the egg mixture and whisk again to combine.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Slowly mix the dry ingredients into the wet ingredients, alternating with the melted butter, until fully incorporated.
- Fold in the fruit gently, ensuring it’s evenly distributed in the batter.
- Pour the batter into the greased pan, spreading it evenly. Sprinkle sugar on top for a crunchy finish.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown.
- Let the cake cool completely before serving.
Notes
- Grease the pan generously to prevent sticking.
- Use high-quality butter for the best texture and flavor.
- Make sure to whisk the eggs and sugar thoroughly to achieve a fluffy texture.
- For a gluten-free version, substitute with almond flour or gluten-free all-purpose flour.
- If you use softer fruits like peaches, consider peeling them for better texture.
- You can substitute nectarines with other stone fruits like peaches or plums.
