- 2 tablespoons butter or olive oil
- 3 medium yellow or white onions, peeled and diced
- 2 cloves garlic, minced
- 1 ½ cups light sour cream or plain Greek yogurt
- 2 teaspoons chopped fresh chives
- 2 teaspoons Worcestershire sauce, to taste
- 1 teaspoon fresh thyme leaves or ¼ teaspoon dried thyme
- 1 teaspoon fine sea salt
- ½ teaspoon freshly cracked black pepper
Instructions
- Caramelize the onions: In a large sauté pan or heavy-bottomed pot, melt the butter or add the olive oil over medium heat. Add the diced onions and cook, stirring every few minutes, for 30 to 40 minutes until they’re deeply golden brown and caramelized. If the onions start to stick or burn, add a splash of water to deglaze the pan.
- Sauté the garlic: Once the onions are caramelized, stir in the minced garlic and cook for another 1 to 2 minutes until fragrant. Remove from heat and allow the onion mixture to cool completely. To speed this up, you can refrigerate the mixture or spread it out on a plate to cool faster.
- Mix the base: In a mixing bowl, combine the cooled onion-garlic mixture with light sour cream (or Greek yogurt), Worcestershire sauce, chopped chives, thyme, salt, and pepper. Stir well until everything is smooth and evenly incorporated.
- Taste and adjust: Give the dip a taste and adjust the seasonings as needed. You can add more salt, pepper, or Worcestershire to suit your flavor preferences.
- Serve and store: Transfer the dip to a serving bowl and garnish with extra caramelized onions and chives if desired. Serve immediately or cover and refrigerate for up to 3 days. The flavor deepens as it chills.
Notes
- You can make the dip up to two days in advance and it will taste even better. Swap in Greek yogurt to boost protein and lower fat. For extra flavor, add a splash of white wine while caramelizing the onions. To make it vegetarian, use a vegan Worcestershire sauce. This dip also makes a fantastic sandwich spread or burger topping.
