Instructions

Soak the Pineapple

Begin by placing the pineapple rings in a medium-sized bowl. Pour the pineapple juice over the rings and let them soak for at least an hour. This step enhances the fruity flavor and adds moisture. After soaking, drain the rings and pat them dry using paper towels.

Prepare the Coating

Set up a dipping station:

  • In the first bowl, add all-purpose flour.
  • In the second, pour the sweetened coconut.
  • In the third, whisk together the eggs and coconut milk until smooth.

Coat the Pineapple Rings

Working with one ring at a time:

  • Dredge the pineapple ring in flour, shaking off the excess.
  • Dip it into the egg and coconut milk mixture, ensuring it’s fully coated.
  • Press the pineapple into the sweetened coconut, covering all sides evenly.

Fry the Pineapple Rings
