Description

These creamy frozen yogurt bars are the perfect treat to satisfy your sweet tooth. With only 5 simple ingredients, they are high in protein and customizable for different tastes and dietary needs. Whether you’re looking for a quick snack or a refreshing dessert, these frozen yogurt bars are a great option for any time of the year.


Ingredients

  • 2 cups thick Greek yogurt or coconut yogurt
  • 5 tbsp protein powder (optional)
  • 3-4 tbsp maple syrup or honey
  • Pinch of sea salt
  • 1 tsp vanilla extract
  • 1 cup chocolate chips
  • 1/4 cup peanut butter
  • 2 tbsp protein powder (optional, for peanut butter cups)


Instructions

  1. Make the peanut butter cups by melting chocolate in a small bowl until smooth. Add a little melted chocolate to the bottom of chocolate cup molds or mini muffin pans. Freeze for a few minutes to firm up.
  2. In another bowl, mix peanut butter with protein powder (if using). Add some of the peanut butter mixture on top of each chocolate crevice. Then, top with more melted chocolate. Freeze for 1-2 hours until firm.
  3. In a large bowl, combine Greek yogurt, honey, vanilla extract, and protein powder (if using). Stir until smooth.
  4. Line a loaf pan or silicone mold with parchment paper and pour in the yogurt mixture. Spread evenly.
  5. Chop the peanut butter cups into smaller pieces and sprinkle them on top of the yogurt mixture. Alternatively, fold the pieces into the yogurt before pouring into the pan.
  6. Freeze for at least 5 hours or overnight until firm.
  7. Let the bars thaw for 5-10 minutes before cutting into pieces. Store in an airtight container in the freezer and thaw for a few minutes before eating for the best texture.

Notes

  • You can use any nut butter you prefer, like cashew butter or almond butter.
  • For a dairy-free version, use coconut yogurt instead of Greek yogurt and choose a plant-based protein powder.
  • If you don’t want to make peanut butter cups, simply stir in chocolate chips into the yogurt mixture.
