Description

  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 180°C (350°F) and line two baking trays with parchment paper.
  2. Whisk together the flour (60g), cocoa powder (25g), baking powder (1/2 teaspoon), and salt (1/4 teaspoon) in a bowl.
  3. Melt the chopped dark chocolate (200g) and unsalted butter (56g) in 30-second microwave intervals, stirring until smooth. Let cool slightly.
  4. Beat the eggs and light brown sugar (150g) for about 5 minutes until pale, thick, and tripled in volume.
  5. Add the melted chocolate mixture and vanilla extract (1 teaspoon) to the egg mixture and mix until fully combined.
  6. Gently fold in the dry ingredients until just combined. The batter will resemble thick brownie batter.
  7. Chill the batter for 15 minutes to firm slightly.
  8. Scoop portions onto prepared trays, spacing them evenly.
  9. Bake one tray at a time for 10–12 minutes until tops are shiny and cracked but centers remain soft.
  10. Cool on the tray for 15–20 minutes before transferring to a wire rack to cool completely.
