For the Steak Bites

  • ½ teaspoon black pepper

For the Parmesan Cream Sauce

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 ½ cups heavy cream
  • ⅔ cup Parmesan cheese, grated
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Steak Bites: Pat the steak pieces dry with a paper towel to remove excess moisture. Season generously with salt, black pepper, and smoked paprika if using. Let the steak sit at room temperature for 10–15 minutes to ensure even cooking.
  2. Sear the Steak Bites: Heat avocado oil in a large skillet over medium-high heat until shimmering. Add the steak in a single layer, making sure not to overcrowd the pan. Let them sear undisturbed for about 2–3 minutes until a golden-brown crust forms. Flip and cook for another 2 minutes until the steak reaches your desired doneness. Transfer to a plate and cover with foil to keep warm.
  3. Make the Garlic Butter: In the same skillet, lower the heat to medium and add butter. Once melted, stir in minced garlic and sauté for about 30 seconds until fragrant. Add the cooked steak bites back to the pan and toss to coat them evenly in the garlic butter. Remove from heat and set aside.
  4. Prepare the Parmesan Cream Sauce: In a separate saucepan over medium heat, melt butter and add minced garlic. Sauté for about 1 minute until fragrant. Slowly pour in the heavy cream while stirring continuously. Let the mixture simmer for 2–3 minutes until slightly thickened. Gradually whisk in the Parmesan cheese until smooth and creamy. Season with salt, black pepper, and red pepper flakes if using.
  5. Combine and Serve: Return the steak bites to the skillet and pour the Parmesan cream sauce over them. Toss gently to coat each piece. Let it simmer for 1–2 minutes to blend the flavors. Garnish with freshly chopped parsley and serve hot with mashed potatoes, roasted vegetables, or crusty bread.

  • For extra flavor, deglaze the skillet with a splash of white wine before adding the cream sauce.
