- 1 1/2 tsp paprika
- 3/4 tsp kosher salt
- 1/2 tsp cracked black pepper
- 3 garlic cloves, minced
- 2 to 3 tbsp grated Parmesan cheese
- Juice of 1/2 lemon
- 2 tbsp finely chopped fresh parsley
Instructions
- Preheat the oven to 450ºF and place a large rimmed baking sheet in the center oven rack.
- Cut the cauliflower into small, evenly sized florets and place them in a large bowl. Toss with olive oil, paprika, salt, and black pepper.
- Spread the cauliflower onto the preheated baking sheet in a single layer. Roast for 20-25 minutes, tossing once halfway through, until lightly charred and tender.
- Sprinkle the minced garlic and grated Parmesan over the cauliflower and return it to the oven for an additional 5 minutes.
- Once done, drizzle with lemon juice and garnish with fresh parsley. Toss to combine and serve immediately.
