Description

Garlic-Parmesan Roasted Cauliflower is a delicious and easy-to-make side dish that features crispy, caramelized cauliflower roasted with garlic, paprika, and Parmesan. This recipe is perfect for weeknight dinners or as a special treat for guests.


Ingredients

  • 1 medium head cauliflower, cut into florets (about 8 cups)
  • 3 tbsp extra-virgin olive oil
  • 1 1/2 tsp paprika
  • 3/4 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 3 garlic cloves, minced
  • 2 to 3 tbsp grated Parmesan cheese
  • Juice of 1/2 lemon
  • 2 tbsp finely chopped fresh parsley

Instructions

  1. Preheat the oven to 450ºF and place a large rimmed baking sheet in the center oven rack.
  2. Cut the cauliflower into small, evenly sized florets and place them in a large bowl. Toss with olive oil, paprika, salt, and black pepper.
  3. Spread the cauliflower onto the preheated baking sheet in a single layer. Roast for 20-25 minutes, tossing once halfway through, until lightly charred and tender.
  4. Sprinkle the minced garlic and grated Parmesan over the cauliflower and return it to the oven for an additional 5 minutes.
  5. Once done, drizzle with lemon juice and garnish with fresh parsley. Toss to combine and serve immediately.
