  • 1012 baguette slices (about ½” thick)
  • 6 tbsp olive oil, divided
  • 1 teaspoon garlic powder
  • 1 avocado
  • Juice of ½ lime
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 12 large shrimp, peeled and deveined
  • 2 garlic cloves, thinly sliced
  • ¾ teaspoon smoked paprika
  • ½ teaspoon cumin
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Toast the bread: Preheat the oven to 350°F and line a baking sheet with parchment paper. Arrange the baguette slices in a single layer. In a small bowl, mix 3 tablespoons of olive oil with garlic powder and brush both sides of each baguette slice. Bake for 10-15 minutes, or until crisp and golden.
  2. Prepare the avocado spread: In a bowl, mash the avocado with lime juice, salt, and black pepper until smooth. Cover and set aside.
  3. Cook the shrimp: In a large skillet, heat the remaining 3 tablespoons of olive oil over low heat. Add the sliced garlic and sauté for about 2 minutes until fragrant. Increase the heat to medium-high and add the shrimp, smoked paprika, cumin, salt, and black pepper. Stir and cook for about 5 minutes, flipping the shrimp once or twice, until they turn pink and opaque. Remove from heat.
  4. Assemble the crostini: Spread a generous layer of mashed avocado on each toasted baguette slice. Top with one shrimp per crostini, pressing gently to secure. Serve immediately while warm.

Notes

  • Use fresh shrimp for the best flavor, but if using frozen shrimp, thaw them completely and pat dry before cooking.
  • Shrimp cook quickly, so watch them closely. They should turn pink and curl into a “C” shape.
  • If making ahead, toast the baguette slices and cook the shrimp separately, then assemble just before serving.
  • For a spicier version, add a pinch of cayenne pepper or a drizzle of hot sauce.
