Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, beat together softened butter, brown sugar, and molasses until creamy.
- Stir in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
- Gradually add the dry ingredients to the butter mixture and mix until a dough forms.
- Divide the dough into two parts, wrap in plastic wrap, and refrigerate for at least 3 hours.
- Once chilled, roll out the dough on a floured surface to ¼-inch thick. Use a gingerbread man cookie cutter to cut out shapes.
- Transfer the cut-out cookies to the prepared baking sheet, spacing them at least 2 inches apart.
- Bake in the preheated oven for 8-10 minutes or until the edges are firm but the centers remain soft.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- For icing, whisk together powdered sugar, milk, corn syrup, and vanilla extract. Adjust the consistency with more milk or powdered sugar as needed.
