Instructions

  1. In a medium bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Set aside.
  2. In a large bowl, beat the softened butter, brown sugar, and molasses with an electric mixer until light and fluffy (about 2 minutes).
  3. Add the egg and beat until fully combined.
  4. Gradually add the dry ingredients to the wet ingredients on low speed until the dough comes together. Do not overmix.
  5. Divide the dough in half, wrap each portion in plastic wrap, and refrigerate for at least 1 hour or overnight.
  6. Preheat the oven to 350°F (175°C). Remove dough from the fridge and let it rest for 10 minutes.
  7. Roll out the dough on a lightly floured surface to 1/4-inch thickness. Use cookie cutters to cut out gingerbread men.
  8. Transfer cookies to parchment-lined baking sheets. Bake for 9–10 minutes or until edges are set and centers are soft.
  9. Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. To make royal icing, combine powdered sugar, meringue powder, and water. Beat on low until moistened, then on medium for 1–3 minutes until glossy. Keep covered until use.
  11. Decorate cooled cookies with icing and sprinkles as desired.
