Description

Glazed Carrots are tender oven-roasted carrots coated in a sweet honey butter glaze and finished with fresh herbs. This easy side dish is perfect for weeknight dinners or holiday meals, delivering a glossy, caramelized texture and balanced sweet-savory flavor.


Ingredients

  • 2 pounds medium carrots, scrubbed and trimmed
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons honey
  • 2 teaspoons chopped fresh thyme leaves
  • 2 tablespoons chopped fresh parsley leaves
  • 1 1/2 tablespoons unsalted butter, cubed


Instructions

  1. Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Arrange the carrots in a single layer on the prepared baking sheet.
  3. Drizzle with olive oil, then season with kosher salt and black pepper. Toss directly on the pan until evenly coated.
  4. Roast for 20–25 minutes, or until the carrots are almost fork-tender.
  5. Remove from the oven and drizzle honey over the carrots. Sprinkle with chopped thyme and toss gently to coat.
  6. Return to the oven and roast for an additional 5 minutes, or until fully tender and lightly caramelized.
  7. Remove from the oven and immediately stir in the cubed butter and chopped parsley until melted and glossy.
  8. Taste and adjust seasoning if needed. Serve warm.
