Description

Gooey Brownie Pie is a rich, fudgy chocolate dessert with a crackly top and irresistibly soft center. Made with melted semi-sweet chocolate, butter, and just enough flour for structure, this brownie pie bakes into a decadent sliceable treat perfect for holidays, gatherings, or serious chocolate cravings.

Ingredients

Scale
  • 6 tablespoons (85 g) unsalted butter
  • 3 cups (510 g) semi-sweet chocolate chips, divided (2 cups / 340 g + 1 cup / 170 g)
  • 3 large eggs (room temperature)
  • 1 cup (200 g) granulated sugar
  • 1 teaspoon (5 ml) vanilla extract
  • 1/2 cup (60 g) all-purpose flour
  • 1/4 teaspoon (1 g) baking powder
  • 1/4 teaspoon (1.5 g) salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch pie plate or springform pan.
  2. In a heat-safe bowl, melt 6 tablespoons butter with 2 cups (340 g) chocolate chips using a double boiler or microwave at 50% power, stirring every 30 seconds until smooth. Let cool slightly.
  3. In a separate bowl, beat the eggs, granulated sugar, and vanilla extract with an electric mixer on medium-high speed for about 3 minutes until light and fluffy.
  4. Gently fold the cooled chocolate mixture into the egg mixture until fully combined.
  5. Add the flour, baking powder, and salt. Fold just until incorporated; do not overmix.
  6. Stir in the remaining 1 cup (170 g) chocolate chips.
  7. Pour the batter into the prepared pan and smooth the top evenly.
  8. Bake for 35–40 minutes, until the edges are set and the center is slightly jiggly with a crackly top.
  9. Cool completely in the pan on a wire rack before slicing and serving.

Notes

  • Do not overbake; the center should remain slightly soft for a gooey texture.
  • Use high-quality semi-sweet chocolate for the best flavor and melt.
  • Allow the pie to cool fully for clean slices and proper setting.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for a denser texture.
  • Serve warm with vanilla ice cream or hot fudge sauce for extra indulgence.
