  • 5 tablespoons (71g) unsalted butter, melted
  • 8 ounces (226g) full-fat brick cream cheese, cold
  • 1 1/2 cups (180g) powdered sugar
  • 1/8 teaspoon salt
  • 1/2 teaspoon mint extract (or peppermint extract)
  • 3 drops green food coloring (optional)
  • 1 1/2 cups (355ml) heavy whipping cream, cold
  • 1 Oreo cookie, crushed (optional garnish)
  • 2 tablespoons chocolate syrup (optional for serving)


Instructions

  1. Place the 25 Oreo cookies (filling included) into a food processor and pulse until fine crumbs form.
  2. Transfer the crumbs to a 9-inch pie dish and mix with 5 tablespoons (71g) melted butter until evenly combined.
  3. Press the mixture firmly into the bottom and up the sides of the pie dish. Freeze the crust for 15โ€“20 minutes while preparing the filling.
  4. In a large bowl, beat 8 ounces (226g) cold cream cheese until smooth and creamy.
  5. Add 1 1/2 cups (180g) powdered sugar, 1/8 teaspoon salt, 1/2 teaspoon mint extract, and 3 drops green food coloring. Beat until fully combined and smooth.
  6. In a separate bowl, whip 1 1/2 cups (355ml) cold heavy whipping cream to stiff peaks.
  7. Gently fold or beat the whipped cream into the mint cream cheese mixture until thick and fluffy.
  8. Spread the filling evenly into the chilled Oreo crust and smooth the top with a spatula.
  9. Sprinkle 1 crushed Oreo cookie on top if desired.
  10. Refrigerate the pie for at least 2 hours until fully set. Slice with a warm knife and serve with chocolate syrup if desired.
