Description
These Greek Yogurt Cinnamon Rolls are soft, fluffy, and slightly tangy thanks to protein-rich Greek yogurt in the dough. Filled with warm cinnamon sugar and topped with a light glaze, they make a comforting breakfast or brunch treat with a lighter twist on traditional cinnamon rolls.

- 3 1/2 cups bread flour (420 g)
- 2 teaspoons instant yeast
- 2 tablespoons granulated sugar
- 1 teaspoon salt
- 1 1/3 cups fat-free plain Greek yogurt (333 g)
- 1/2 cup water (120 ml)
- 2 tablespoons additional water (30 ml)
- 3 tablespoons brown sugar
- 1 tablespoon ground cinnamon
- 1 cup powdered sugar (120 g)
- 2 tablespoons milk (30 ml)
Instructions
- In a large mixing bowl or stand mixer bowl, combine bread flour, instant yeast, sugar, and salt. Mix well so the dry ingredients are evenly distributed.
- Add the Greek yogurt and begin mixing on low speed to start forming the dough.
- Gradually add 1/2 cup water and continue mixing. Add the remaining 2 tablespoons water slowly until a soft dough forms.
- Knead the dough for 8–10 minutes until it becomes smooth, elastic, and slightly tacky.
- Transfer the dough to a lightly greased bowl, cover, and let it rise in a warm place for 60–90 minutes until doubled in size.
- While the dough rises, mix the brown sugar and cinnamon together in a small bowl to prepare the filling.
- Punch down the risen dough and place it on a floured surface. Roll it into a rectangle about 18 x 10 inches.
- Lightly brush the surface with a little water or milk so the filling sticks.
- Sprinkle the cinnamon sugar mixture evenly across the dough.
- Roll the dough tightly from the long edge into a log and pinch the seam to seal.
- Cut the log into 12 equal rolls using dental floss or a sharp knife.
- Place the rolls in a parchment-lined baking pan, swirl side up, leaving small gaps between each roll.
- Allow the rolls to rise again for about 30 minutes while preheating the oven to 350°F (180°C).
- Bake for 15–20 minutes until the rolls are lightly golden brown.
- Mix powdered sugar and milk to create a glaze, then drizzle it over the warm cinnamon rolls before serving.
Notes
- Use bread flour for the best chewy and fluffy texture.
- If using all-purpose flour instead, the rolls may be softer but still delicious.
- Drain excess liquid from Greek yogurt before using for better dough consistency.
- Measure flour accurately or weigh it for the best baking results.
