Instructions

  1. Add 1 cup of plain Greek yogurt to a medium mixing bowl.
  2. Stir in 1/2 cup almond flour and mix until a thicker dough-like texture begins to form.
  3. Add 2 tablespoons peanut butter (or almond butter) and mix thoroughly until smooth and creamy.
  4. Pour in 2 tablespoons maple syrup or honey and stir until the sweetness is evenly distributed.
  5. Mix in 1 teaspoon vanilla extract and 1/8 teaspoon salt to enhance the classic cookie dough flavor.
  6. Fold in 1/4 cup mini chocolate chips using a spatula until evenly incorporated.
  7. Check the texture. If the dough is too soft, add 1–2 tablespoons additional almond flour. If too thick, add 1 tablespoon Greek yogurt.
  8. Refrigerate the dough for 10–15 minutes to allow it to firm up slightly.
