Description

  • 1 1/2 cups granulated sugar
  • 1/2 cup light corn syrup

  • 1/2 teaspoon salt
  • 1/4 teaspoon cream of tartar (optional)
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/8 teaspoon green gel food coloring (or as needed for desired color)


Instructions

  1. Preheat oven to 200°F (93°C). Line a large rimmed baking sheet with parchment paper or lightly grease it.
  2. Place 4 quarts of popped popcorn in a very large mixing bowl, removing any unpopped kernels.
  3. In a heavy saucepan over medium heat, melt the butter. Stir in sugar, light corn syrup, cream of tartar, and salt. Stir constantly until the sugar dissolves and the mixture begins to boil.
  4. Increase heat slightly to medium-high and bring to a steady boil. Add green food coloring and stop stirring. Boil without stirring for 5 minutes, or until the mixture reaches 250–260°F on a candy thermometer.
  5. Remove from heat and carefully stir in vanilla extract and baking soda. The mixture will foam.
  6. Immediately pour the hot syrup over the popcorn. Gently stir until evenly coated.
  7. Spread coated popcorn onto the prepared baking sheet in an even layer.
  8. Bake for 1 hour, stirring every 15 minutes to ensure even coating and prevent burning.
  9. Remove from oven and allow to cool completely. Break into pieces and store in an airtight container.

  • Use a reliable candy thermometer to ensure the syrup reaches 250–260°F for a crisp coating.
  • Do not stir the syrup once it begins boiling to prevent crystallization.
