  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • Salt & black pepper to taste
  • 1/2 cup Greek yogurt
  • 2 garlic cloves, minced
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh parsley
  • 1/4 tsp paprika
  • Cooked rice or quinoa (for serving)


Instructions

  1. Season the chicken breasts with salt, black pepper, and 1 tablespoon of olive oil. Grill the chicken on medium-high heat until fully cooked (about 6-8 minutes per side). Once cooked, slice the chicken into thin strips.
  2. Toss the broccoli florets with the remaining olive oil, salt, and pepper. Roast in a preheated oven at 400°F (200°C) for about 15 minutes, or grill until tender and slightly charred.
  3. In a small bowl, mix together the Greek yogurt, minced garlic, lemon juice, chopped parsley, and paprika. Stir until smooth and well combined.
  4. Serve the grilled chicken slices and roasted broccoli over a bed of cooked rice or quinoa. Drizzle generously with the creamy garlic sauce and garnish with extra parsley if desired.
