Description

Ingredients

  • 6 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed lemon juice, plus zest
  • 2 teaspoons dried oregano
  • 4 garlic cloves, pressed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley or cilantro, for garnish
  • Lemon wedges, for serving


Instructions

  1. In a mixing bowl, combine olive oil, lemon juice, lemon zest, oregano, garlic, salt, and black pepper. Stir to combine.
  2. Pat the chicken breasts dry and, if needed, pound them to an even thickness.
  3. Place the chicken in a resealable bag or bowl and pour the marinade over the chicken. Toss to coat well. Marinate for 30 minutes to 6 hours.
  4. Preheat the grill to medium-high heat.
  5. Place the chicken on the grill and cook for 5-7 minutes on each side, or until the internal temperature reaches 160°F for chicken breasts.
  6. Remove the chicken from the grill and let it rest for 5 minutes.
  7. Garnish with fresh parsley or cilantro and serve with lemon wedges.

Notes

  • Do not marinate the chicken for more than 6 hours as the acidity from the lemon can make the chicken tough.
  • If using chicken thighs, the cooking time may vary slightly.
  • For extra flavor, you can zest the lemon and include the zest in the marinade.
