- 1/4 cup olive oil
- 1/4 cup freshly squeezed lemon juice, plus zest
- 2 teaspoons dried oregano
- 4 garlic cloves, pressed

- 1/4 teaspoon black pepper
- Fresh parsley or cilantro, for garnish
- Lemon wedges, for serving
Instructions
- In a mixing bowl, combine olive oil, lemon juice, lemon zest, oregano, garlic, salt, and black pepper. Stir to combine.
- Pat the chicken breasts dry and, if needed, pound them to an even thickness.
- Place the chicken in a resealable bag or bowl and pour the marinade over the chicken. Toss to coat well. Marinate for 30 minutes to 6 hours.
- Preheat the grill to medium-high heat.
- Place the chicken on the grill and cook for 5-7 minutes on each side, or until the internal temperature reaches 160°F for chicken breasts.
- Remove the chicken from the grill and let it rest for 5 minutes.
- Garnish with fresh parsley or cilantro and serve with lemon wedges.
Notes
- Do not marinate the chicken for more than 6 hours as the acidity from the lemon can make the chicken tough.
- If using chicken thighs, the cooking time may vary slightly.
- For extra flavor, you can zest the lemon and include the zest in the marinade.
