  • 12 ounces salsa verde
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice

  • 1 teaspoon freshly ground black pepper
  • 4 slices pepper Jack cheese (or as desired)

Instructions

  1. In a large zip-top plastic bag, add all ingredients except the cheese and cilantro. Seal the bag and shake to evenly coat the chicken.
  2. Refrigerate the chicken and let it marinate for at least 30 minutes (or overnight for more flavor).
  3. Preheat the grill to medium-high heat and lightly oil the grill grates.
  4. Add the marinated chicken to the grill. Grill for about 5 minutes on the first side with the lid closed, then flip and cook for about 4 minutes on the second side until the chicken is cooked through.
  5. Reduce the heat to medium-low, add a slice of pepper Jack cheese on each chicken breast, and close the lid for 1 minute until the cheese has melted.
  6. Optional: Garnish with fresh cilantro and serve with lime wedges.
