Instructions
- Preheat your oven to 350°F. Line baking sheets with parchment paper.
- In a stand mixer, beat the unsalted butter and granulated sugar together until light and creamy.
- Add vegetable oil, eggs, vanilla extract, and almond extract to the butter mixture and continue mixing until fully combined.
- In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
- Shape the dough into small balls, about 1-2 tablespoons each, and place them on the prepared baking sheets. Gently flatten each dough ball.
- Chill the cookie dough balls in the refrigerator for at least 15 minutes to prevent spreading.
- Bake the cookies for 15-20 minutes, or until the edges are just barely golden. Let the cookies cool completely on a wire rack.
- To make the frosting, beat the powdered sugar, butter, and vanilla extract until smooth. Add heavy cream and neon green food coloring to achieve the desired color and texture.
- Once the cookies have cooled, pipe the frosting onto each cookie and decorate with red heart sprinkles and Christmas sprinkles around the edges.
- Serve immediately or store in an airtight container.
