  • 2 medium sweet potatoes, diced

  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 1 cup shredded cheddar or mozzarella cheese (optional)


Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
  2. In a large skillet over medium heat, add olive oil. Sauté diced onions and bell peppers for about 5 minutes, until softened.
  3. Add the ground turkey to the skillet. Cook for 7–10 minutes, breaking it up with a spatula until browned and no longer pink.
  4. Stir in diced sweet potatoes, minced garlic, cumin, paprika, chili powder, salt, and pepper. Cook for 5 minutes to combine flavors and coat everything in the spices.
  5. Transfer the mixture to the prepared baking dish and spread evenly. Top with shredded cheese if using.
  6. Bake in the preheated oven for 25–30 minutes, until the top is golden brown and the sweet potatoes are tender.
  7. Let the bake cool for a few minutes before serving. Enjoy!
