Description

Ground Turkey Taco Soup is a hearty, easy one-pot meal made with lean ground turkey, beans, corn, salsa, and taco seasoning. It’s perfect for a comforting, flavorful dinner the whole family will love — and it’s ready in just 30 minutes!

Ingredients

Scale
  • 1 lb ground turkey: lean protein base for a lighter soup
  • 15 oz canned corn, drained: adds sweetness and texture
  • 15 oz petite diced tomatoes: brings acidity and richness
  • 16 oz canned kidney beans, drained and rinsed: hearty and filling
  • 16 oz canned black beans, drained and rinsed: adds creaminess and protein
  • 8 oz chunky salsa: infuses bold tomato and pepper flavor
  • 1 oz taco seasoning (1 packet): delivers classic taco flavor
  • 14 oz vegetable broth: creates the savory soup base
  • Optional toppings: sour cream, shredded cheese, tortilla chips, cilantro, diced avocado

Instructions

  1. In a large pot over medium heat, cook and crumble the ground turkey until fully browned. Drain any excess fat and return the turkey to the pot.
  2. Drain and rinse the canned beans and corn.
  3. Add the beans, corn, diced tomatoes, salsa, taco seasoning, and vegetable broth to the pot with the cooked turkey. Stir to combine.
  4. Cover the pot and let the soup simmer over low heat for 30 minutes to allow flavors to meld.
  5. Serve hot with your choice of toppings such as shredded cheese, sour cream, and tortilla chips.

Notes

  • To thicken the soup, add a tablespoon or two of tomato paste if desired.
  • This soup freezes well for up to 3 months — perfect for meal prep.
  • Customize with different beans or add heat with jalapeños or hot sauce.
  • Use ground chicken or beef as an alternative to turkey.
