- 2 tsp sesame oil
- 3 cups broccoli florets (fresh or frozen)
- 1 small onion (small diced)
- 1 cup shredded carrots
- Salt and pepper to taste
- For the Teriyaki Sauce:
- 3/4 cup water
- 1/4 cup soy sauce (low sodium preferred)
- 2 tbsp honey
- 2 tbsp brown sugar (light)
- 2 cloves garlic, minced
- 1 tsp fresh ginger, minced (or ground ginger)
- 1/4 cup cornstarch
- Orange zest (optional)
Instructions
- In a small saucepan, combine water, soy sauce, honey, brown sugar, garlic, and ginger. Stir to combine and bring to a slight boil.
- In a separate bowl, whisk together cornstarch and 1/4 cup of water to create a slurry. Once the mixture in the saucepan starts to bubble, slowly stir in the slurry, continuing to stir until the sauce thickens. Remove from heat and stir in orange zest. Set aside.
- Heat sesame oil in a wok or large skillet over medium-high heat. Add the diced onion and sauté for 2-3 minutes until softened.
- Add ground turkey to the pan and cook until browned and fully cooked, about 7-10 minutes.
- Add the broccoli and shredded carrots, cooking for another 5-7 minutes until vegetables are tender.
- Turn the heat to low and pour in the teriyaki sauce. Stir everything to coat and simmer for a few minutes until heated through.
- Serve over rice or cauliflower rice. Garnish with toasted sesame seeds and sliced green onions, if desired.
Notes
- You can substitute ground turkey with ground chicken, pork, or beef. If using beef, drain any excess grease after browning.
- If you prefer a spicier dish, add cayenne pepper, red pepper flakes, or a touch of sriracha.
- For a saucier stir fry, double the teriyaki sauce recipe.
- Frozen vegetables work well in this dish, making it even quicker and easier to prepare.
