- 3/4 cup Ro-Tel Original, drained
- 1/3 cup red onion, finely diced
- 1 orange bell pepper, diced
- 1 jalapeno, seeded and minced
- 1/3 cup cilantro, chopped
- 1 large clove garlic, minced
- 1 lime, zested and juiced
- 3/4 teaspoon kosher salt
- 1/2 teaspoon black pepper
- Blue corn tortilla chips for serving
Instructions
- Rinse the black beans in a colander under cold water until the water runs clear. Transfer to a large mixing bowl.
- Drain the Ro-Tel and add it to the beans in the bowl.
- Dice the red onion, orange bell pepper, and jalapeno, and add them to the beans along with the chopped cilantro, minced garlic, lime zest, and lime juice.
- Season with kosher salt and black pepper. Toss everything together to combine.
- Taste the dip and adjust seasoning if needed by adding more salt, pepper, lime, or hot sauce.
- Serve the dip with blue corn tortilla chips for a festive touch.
