Description

This Halloween Bean Dip is a colorful, vibrant, and healthy appetizer perfect for any Halloween party. It’s made with black beans, fresh vegetables, and zesty lime, all served with blue corn tortilla chips for a fun, festive vibe.

Ingredients

Scale
  • 1 can (29 oz) black beans, rinsed and drained
  • 3/4 cup Ro-Tel Original, drained
  • 1/3 cup red onion, finely diced
  • 1 orange bell pepper, diced
  • 1 jalapeno, seeded and minced
  • 1/3 cup cilantro, chopped
  • 1 large clove garlic, minced
  • 1 lime, zested and juiced
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Blue corn tortilla chips for serving

Instructions

  1. Rinse the black beans in a colander under cold water until the water runs clear. Transfer to a large mixing bowl.
  2. Drain the Ro-Tel and add it to the beans in the bowl.
  3. Dice the red onion, orange bell pepper, and jalapeno, and add them to the beans along with the chopped cilantro, minced garlic, lime zest, and lime juice.
  4. Season with kosher salt and black pepper. Toss everything together to combine.
  5. Taste the dip and adjust seasoning if needed by adding more salt, pepper, lime, or hot sauce.
  6. Serve the dip with blue corn tortilla chips for a festive touch.

Notes

  • If you prefer a spicier dip, add extra jalapenos or a dash of hot sauce.
  • This dip can be made up to one day ahead of time. Just add cilantro just before serving for the freshest flavor.
  • For a fun Halloween presentation, serve the dip in a hollowed-out pumpkin or with dry ice for a spooky effect.
