Description

Halloween Pasta Salad is a spooky, fun, and delicious dish made with black pasta, mozzarella eyeballs, mushroom skulls, and zesty Italian dressing. Perfect for any Halloween celebration, it’s both visually appealing and packed with flavor.


Ingredients

  • 16 oz White Pasta (rotini, cellantani, or farfalle)
  • 0.5 teaspoon Gel Black Food Coloring
  • 8 Button Mushrooms
  • 2 tablespoons Butter
  • 1 tablespoon Olive Oil
  • 16 Marinated Mozzarella Balls (bocconcini)
  • 5 whole Black Olives
  • 1 large Orange Bell Pepper
  • 0.5 cup Italian Dressing


Instructions

  1. Clean the mushrooms and trim the ends. Use a straw to carve out eyes, nostrils, and teeth. Slice the mushrooms in half to create skulls. Cook the mushroom skulls in butter and olive oil until browned and caramelized.
  2. Boil a large pot of salted water, add black food coloring, and cook the pasta until al dente. Drain and cool under cold water.
  3. Slice the black olives in half and carve out the pupils. Slice the mozzarella balls and carve a small hole in the top to fill with pesto. Place the olive pupils into the mozzarella balls to create eyeballs.
  4. Remove seeds from the bell pepper and cut into Halloween shapes using a mini cookie cutter.
  5. Combine the pasta, bell pepper shapes, and mushroom skulls in a bowl. Toss with Italian dressing.
  6. Arrange the mozzarella eyeballs around the pasta and press them gently into the mixture. Serve chilled or at room temperature.

Notes

  • Do not over-rinse the pasta to avoid losing the black color.
  • The pasta can be prepared ahead of time and stored separately in an airtight container.
