Description

This easy ham and cheese breakfast casserole with tater tots is a beginner-friendly dish perfect for brunches, holidays, or make-ahead meals.


Ingredients

  • Frozen tater tots – 1 (32 oz) bag
  • Eggs – 8 large
  • Milk – 1 cup
  • Diced ham – 1 ½ cups
  • Shredded cheddar cheese – 2 cups
  • Chopped onion – ½ cup
  • Chopped bell pepper – ½ cup
  • Salt – 1 tsp
  • Black pepper – ½ tsp
  • Garlic powder – ½ tsp
  • Optional: paprika – ¼ tsp


Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch baking dish. Spread frozen tater tots evenly in the bottom of the dish.
  2. In a bowl, whisk together eggs, milk, salt, pepper, garlic powder, and paprika until well combined.
  3. Sprinkle ham, onion, and bell pepper evenly over the tater tots.
  4. Pour the egg mixture over the casserole, making sure it covers all the ingredients. Shake the dish slightly to help the eggs settle.
  5. Top with shredded cheese, spreading evenly.
  6. Bake for 40–45 minutes until the eggs are set, the cheese is golden, and a knife inserted in the center comes out clean.

Notes

  • Cover loosely with foil if the top browns too quickly.
  • Pre-sauté vegetables to reduce excess moisture and enhance flavor.
  • Can be assembled the night before and baked in the morning.
