This Harry Potter Butterbeer Fudge is a magical, indulgent treat inspired by the famous Butterbeer drink from the wizarding world. With a rich butterscotch base and creamy white chocolate topping, this easy-to-make fudge is the perfect dessert for any occasion.

- 4 ounces marshmallow crème (¾ cup, slightly over half a 7-ounce jar)
- ¾ cup sweetened condensed milk
- ½ cup granulated white sugar
- ¼ cup caramel ice cream syrup/topping
- 1 (11-ounce) bag butterscotch chips
- ½ cup granulated white sugar
- ½ cup salted butter (1 stick)
- 3 ounces marshmallow crème (slightly over ½ cup, the remaining of the jar)
- ¼ cup sweetened condensed milk
- 1 cup white chocolate chips
Instructions
- Prepare the Pan: Line an 8×8-inch baking dish with parchment paper and spray with cooking spray. Set aside.
- Make the Butterbeer Layer: In a medium saucepan over medium-high heat, combine the salted butter, marshmallow crème, sweetened condensed milk, granulated sugar, and caramel syrup. Stir continuously. Once the mixture starts boiling, set a timer for 4 minutes and stir constantly. The mixture will thicken and turn golden brown.
- Add Butterscotch Chips: Remove from heat and stir in the butterscotch chips. Mix until smooth. Whisk for 1–2 minutes to thicken further.
- Chill the Butterbeer Layer: Pour the mixture into the prepared pan and place in the freezer for 1 hour to chill until firm.
- Make the White Chocolate Layer: In another saucepan, combine the granulated sugar, salted butter, marshmallow crème, and sweetened condensed milk. Stir continuously over medium-high heat. Once boiling, reduce the heat to medium and set a timer for 2 minutes, stirring the entire time.
- Add White Chocolate Chips: Remove from heat and stir in the white chocolate chips until completely melted.
- Top with White Chocolate: Immediately pour the melted white chocolate mixture over the chilled butterscotch layer and smooth it to the edges.
- Chill and Serve: Refrigerate the fudge for 2-3 hours or freeze for 1 hour until firm. Once set, slice into 1-inch cubes and serve.
Notes
- To mimic the foam of Butterbeer, make the white chocolate layer thinner than the butterscotch layer.
- This fudge stores well in an airtight container in the refrigerator for up to a week or can be frozen for longer storage.
- For a richer flavor, you can substitute dark chocolate for the white chocolate layer.
