Description

This *Harvest Apple Salad* recipe is a delightful fall dish featuring crisp apples, savory bacon, toasted pecans, and sweet pomegranate seeds. Perfect for any autumn meal, it combines a beautiful mix of textures and flavors to create the ultimate seasonal side dish. The poppy seed dressing brings everything together for a refreshing and satisfying experience.

Ingredients

Scale
  • 22.33 ounces Sweet Kale salad mix
  • 6 strips bacon, thinly sliced
  • ½ cup pecan halves, buttered
  • ¼ cup shaved parmesan cheese
  • 1 honey crisp apple, large, thinly sliced
  • 2 tablespoons pomegranate seeds
  • 1 packet poppy seed dressing (from Sweet Kale salad kit)

Instructions

  1. Open the bag of Sweet Kale salad mix and remove the packet of dressing, pumpkin seeds, and cranberries. Discard the pumpkin seeds and cranberries or save them for another recipe.
  2. Pour the salad mix into a large bowl.
  3. Top the salad with thinly sliced bacon, buttered pecan halves, shaved parmesan cheese, sliced honey crisp apples, and pomegranate seeds.
  4. Pour the poppy seed dressing over the top of the salad and toss everything to combine until evenly coated.
  5. Serve immediately and enjoy!

Notes

  • To avoid the apples turning brown, slice them right before serving. If needed, brush them with a little lemon juice to preserve their freshness.
  • For a make-ahead option, prep all the individual ingredients and store them separately. Assemble the salad right before serving.
  • If you prefer a less savory version, you can substitute the bacon with prosciutto or grilled chicken.
  • If you are looking for additional cheese options, goat cheese, feta, or blue cheese can be great alternatives to parmesan.
