Description

  • 2 scallions, diced
  • 9 large eggs
  • 1 cup whole milk
  • ½ teaspoon salt
  • ½ teaspoon dry ground mustard (optional but recommended)
  • ¼ teaspoon garlic powder

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Arrange the hash browns: Place the frozen hash brown patties in a single layer at the bottom of the prepared baking dish. No need to thaw them first.
  3. Add the toppings: Evenly sprinkle the shredded cheddar and Monterey Jack cheese over the hash browns. Scatter the diced ham and chopped scallions over the cheese layer.
  4. Prepare the egg mixture: In a large bowl, whisk together the eggs, milk, salt, dry mustard (if using), and garlic powder until well combined.
  5. Assemble the casserole: Slowly pour the egg mixture over the layered hash browns and toppings, ensuring everything is evenly coated.
  6. Bake the casserole: Cover with foil and bake for 25 minutes. Remove the foil and continue baking for another 20 minutes, or until the edges are golden and a knife inserted in the center comes out clean.
