  • 1 large apple, peeled and chopped
  • 3 tbsp honey
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 3 tbsp yogurt
  • 2 eggs
  • 1 tbsp butter or coconut oil


Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl or blender, combine oats, chopped apple, honey, cinnamon, vanilla, yogurt, eggs, butter (or coconut oil), baking soda, and baking powder. Blend until smooth.
  3. Once the mixture is smooth, stir in the remaining oats for added texture.
  4. Pour the batter into a parchment-lined baking pan.
  5. Bake for 20-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool for a bit before slicing it into squares.
  7. Store leftovers in an airtight container in the fridge for up to 4 days.
