Description

Healthy Strawberry Mochi is a quick, easy, and delicious dessert made with just three ingredients. This gluten-free, vegan treat offers a chewy texture and a refreshing strawberry flavor. Prepared in the microwave in under 5 minutes, it’s a perfect guilt-free indulgence for any occasion.

Ingredients

Scale
  • 1 cup Sweet Rice Flour (Mochiko)
  • 1/2 cup Fresh Strawberry Puree
  • 2 tablespoons Maple Syrup (or sweetener of choice)

Instructions

  1. Prepare the strawberry puree by blending fresh strawberries until smooth.
  2. In a microwave-safe bowl, combine the sweet rice flour, strawberry puree, and maple syrup. Stir until smooth and free of lumps.
  3. Microwave the mixture on high for 1 minute, then stir. Continue microwaving in 30-second intervals until the mixture thickens into a sticky, dough-like consistency.
  4. Transfer the mochi dough onto a clean surface dusted with rice flour or cornstarch. Allow it to cool slightly before kneading.
  5. Divide the dough into small portions and roll them into balls or desired shapes.
  6. Let the mochi cool completely before serving. Optionally, dust with extra rice flour to prevent sticking.

Notes

  • If using frozen strawberries, make sure to thaw and drain them well before blending.
  • For a firmer texture, reduce the amount of maple syrup slightly.
  • Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
  • Try other fruit purees like mango or blueberry for a different flavor twist.
