Description

Ingredients

  • 1 cup shredded sweetened coconut
  • 1 pre-baked 9-inch pie shell
  • 3 large egg whites (for meringue topping)


Instructions

  1. In a medium saucepan, whisk together the sugar, cornstarch, and salt until evenly combined.
  2. Gradually whisk in the beaten egg yolks, then slowly add the whole milk while whisking to create a smooth mixture.
  3. Place the saucepan over medium heat and cook, stirring constantly, for 10–12 minutes or until the mixture thickens and coats the back of a spoon.
  4. Remove from heat and stir in the butter, vanilla extract, and shredded coconut until fully incorporated.
  5. Pour the hot coconut custard into the pre-baked 9-inch pie shell and spread evenly.
  6. In a clean mixing bowl, beat the egg whites until firm peaks form.
  7. Spread the meringue over the warm filling, sealing it to the edges of the crust.
  8. Bake in a preheated 350°F (175°C) oven for 8–10 minutes or until the meringue is golden brown.
  9. Remove from oven and cool completely, then refrigerate for at least 2 hours before slicing and serving.

Notes

  • Stir the custard constantly to prevent lumps or scorching.
  • Spread meringue over warm filling to prevent weeping.
  • Seal the meringue to the crust edges to avoid shrinking.
  • Refrigerate leftovers and consume within 3 days.
