This homemade green bean casserole is a delightful and flavorful twist on a classic side dish. Ingredients

  • 1 lb Fresh Green Beans (ends snapped off)
  • 8 Tablespoons Salted Butter (divided)
  • 1 Large Onion (chopped)
  • 8 ounces Sliced Mushrooms
  • 3 cloves Garlic (minced)
  • 2 1/2 cups Half-and-Half
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 Tablespoons Flour or Cornstarch
  • 2 cups Fried Onions (such as French’s)
  • 1/2 cup Parmesan Cheese, grated (optional)


Instructions

  1. In a large skillet, heat 4 tablespoons of butter over medium-high heat. Add onions and cook until tender and caramelized, about 7-8 minutes, stirring often.
  2. Add sliced mushrooms and cook for an additional 4 minutes. Stir in garlic and cook for 1 more minute, then set aside.
  3. In the same skillet, melt the remaining 4 tablespoons of butter. Add flour or cornstarch and whisk for about 2 minutes.
  4. Gradually add half-and-half, stirring to combine. Let the mixture cook for 4-5 minutes until it thickens. Season with salt and pepper.
  5. Preheat oven to 350°F (175°C). Boil a large pot of water. Add green beans and cook for 6-7 minutes. Drain and set aside.
  6. Stir the onion-mushroom mixture into the cream sauce. Add green beans and stir to coat.
  7. If using, sprinkle with Parmesan cheese. Pour the mixture into a 9×9-inch baking dish. Bake for 25 minutes or until bubbly.
  8. Top with fried onions and bake for an additional 5 minutes until crispy. Serve immediately.

Notes

  • For bite-sized green beans, cut them in half before cooking.
  • Frozen or canned green beans can be substituted. If using canned, no need to cook beforehand.
  • Make sure to use half-and-half for the perfect creamy consistency in the sauce.
  • If making ahead, assemble the casserole and refrigerate before baking. Bake as instructed when ready to serve.
