Instructions

  1. Juice one fresh lemon to yield about 1/4 cup of juice. Strain to remove seeds if necessary.
  2. In a small bowl or mason jar, combine the lemon juice, Dijon mustard, honey, salt, and black pepper.
  3. Whisk together until the honey dissolves and the mixture is smooth.
  4. Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing. Alternatively, seal the jar and shake vigorously until combined.
  5. Taste and adjust seasoning if needed. For more sweetness, add honey; for a mellower flavor, add more oil.
