Description
This Honey Lemon Vinaigrette is a zesty, fresh, and healthy homemade dressing made with just six ingredients. Perfect for salads, grain bowls, or as a light marinade, it balances the tartness of lemon with the natural sweetness of honey, and it’s ready in under 5 minutes.
Ingredients
Scale
- 1/2 cup olive oil: provides richness and helps emulsify the dressing
- 1/4 cup fresh lemon juice: adds brightness and acidity
- 1 1/2 tablespoons honey: balances the tart lemon with sweetness
- 1 teaspoon Dijon mustard: gives a subtle tang and helps emulsify
- 1/4 teaspoon salt: enhances overall flavor
- 1/4 teaspoon black pepper: adds a mild heat and depth
Instructions
- Juice one fresh lemon to yield about 1/4 cup of juice. Strain to remove seeds if necessary.
- In a small bowl or mason jar, combine the lemon juice, Dijon mustard, honey, salt, and black pepper.
- Whisk together until the honey dissolves and the mixture is smooth.
- Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing. Alternatively, seal the jar and shake vigorously until combined.
- Taste and adjust seasoning if needed. For more sweetness, add honey; for a mellower flavor, add more oil.
- Store in the refrigerator in an airtight container for up to 7 days. Shake before each use.
Notes
- Use fresh lemon juice for the best flavor; bottled juice lacks brightness.
- Add a clove of minced garlic for extra savory depth.
- For a vegan version, substitute honey with maple syrup or agave nectar.
- If the dressing separates in the fridge, just give it a quick shake before serving.
- This vinaigrette can also be used as a marinade for chicken or fish.
