Description

This Honey Lime Rainbow Fruit Salad is a vibrant, refreshing, and healthy dish made with an array of colorful fruits and a simple honey-lime dressing. It’s easy to prepare, packed with flavor, and perfect for any occasion.


Ingredients

  • 1 lb fresh strawberries, chopped
  • 1 lb chopped fresh pineapple
  • 12 oz fresh blueberries
  • 12 oz red grapes, sliced into halves
  • 4 kiwis, peeled and chopped
  • 3 mandarin oranges, peeled
  • 2 bananas, sliced (optional)
  • 1/4 cup honey
  • 2 tsp lime zest (zest of 2 medium limes)
  • 1 1/2 Tbsp fresh lime juice


Instructions

  1. Prepare all the fruit by chopping it into bite-sized pieces (except blueberries) and add it to a large mixing bowl.
  2. In a small bowl, whisk together the honey, lime zest, and lime juice until well combined.
  3. Pour the dressing over the fruit and gently toss to coat the fruit evenly with the dressing.
  4. Serve immediately, or refrigerate for up to a day (except bananas, which should be added just before serving).
