Description
This Honey Mustard Chicken Salad combines juicy grilled chicken, crispy bacon, crumbled gorgonzola cheese, fresh blueberries, and a homemade honey mustard dressing. It’s a delicious, healthy salad perfect for lunch or dinner.
Ingredients
- Honey Mustard Dressing: 3/4 – 1 cup plain Greek yogurt, 2 tbsp yellow mustard, 2 tbsp Dijon mustard, 2-3 tbsp honey, 1 tsp lemon zest, pinch of kosher salt and ground black pepper
- Boneless skinless chicken breasts: 4 breasts
- Chicken Marinade: 1/4 cup soy sauce, 2 tbsp extra virgin olive oil, 2 tsp Worcestershire sauce, 2 tsp garlic (minced), 1 tsp lemon juice, 1 tsp lemon zest, 1/8 tsp kosher salt, 1/8 tsp ground black pepper
- Romaine lettuce: 4 cups chopped
- Gorgonzola cheese: 1 cup crumbled
- Slivered almonds: 1 cup
- Bacon: 1 cup crumbled
- Fresh blueberries: 1 1/2 cups
- Dried cranberries or cherries: 1/2 cup
Instructions
- Combine all dressing ingredients in a mason jar. Secure the lid and shake until well mixed. Taste and adjust sweetness to your preference. Refrigerate until needed.
- In a small bowl, whisk together soy sauce, olive oil, Worcestershire sauce, garlic, lemon juice, lemon zest, salt, and pepper. Pour over the chicken breasts and marinate in the fridge for at least 30 minutes.
- Preheat the grill to medium heat (about 400°F). Grill the chicken for 4-5 minutes on each side. Then move to indirect heat and cook for another 5-7 minutes until it reaches 165°F.
- Remove the chicken from the grill and let rest for 5 minutes before slicing into bite-sized pieces.
- In a large bowl, combine the romaine lettuce, grilled chicken, bacon, slivered almonds, gorgonzola, blueberries, and dried cranberries. Drizzle with honey mustard dressing and toss to combine.
- Serve immediately and enjoy!
Notes
- If you prefer chicken thighs, you can substitute them for chicken breasts.
- For a dairy-free version, replace Greek yogurt with a dairy-free alternative and omit the gorgonzola cheese.
- Store salad ingredients separately in airtight containers for meal prep. Assemble just before serving to avoid sogginess.
