Hot Reuben Dip is a warm, creamy, and cheesy party appetizer inspired by the classic Reuben sandwich. Made with chopped corned beef, tangy sauerkraut, Swiss cheese, cream cheese, and Thousand Island dressing, this baked dip is rich, savory, and perfect for serving with toasted rye bread or crackers.

- 1 cup sour cream
- 1 cup Thousand Island dressing
- 1 tablespoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 1/2 cups cooked corned beef, finely chopped
- 1 cup sauerkraut, well drained and squeezed dry
- 2 cups shredded Swiss cheese, divided
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease an 8×8-inch baking dish.
- In a large mixing bowl, beat the softened cream cheese and sour cream together until smooth and creamy.
- Stir in the Thousand Island dressing, Dijon mustard, garlic powder, and black pepper until fully combined.
- Fold in the chopped corned beef, drained sauerkraut, and 1 1/2 cups of the shredded Swiss cheese.
- Spread the mixture evenly into the prepared baking dish and smooth the top with a spatula.
- Sprinkle the remaining 1/2 cup of Swiss cheese evenly over the top.
- Bake for 20 to 25 minutes, or until the dip is hot and bubbly and the cheese on top is melted and lightly golden.
- Remove from the oven and let rest for 5 minutes before garnishing with chopped parsley and serving warm.
Notes
- Drain the sauerkraut thoroughly to prevent the dip from becoming watery.
- For extra browning, broil the dip for 1 to 2 minutes at the end of baking.
- Substitute Russian dressing for Thousand Island if preferred.
