Description

Huli Huli Chicken is a delicious, sweet and smoky Hawaiian-style grilled chicken recipe. It is made with a flavorful marinade featuring pineapple juice, soy sauce, garlic, and ginger.   • 4 bone-in, skin-on chicken thighs
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch (optional, for thickening the marinade)


Instructions

  1. In a large bowl, combine pineapple juice, soy sauce, brown sugar, garlic, ginger, sesame oil, and rice vinegar. Whisk together until the sugar dissolves.
  2. Place chicken thighs in a resealable plastic bag or shallow dish. Pour the marinade over the chicken and ensure it is evenly coated.
  3. Seal the bag or cover the dish and refrigerate for at least 1 hour, ideally overnight.
  4. Preheat the grill to medium-high heat or the oven to 400°F (200°C).
  5. Grill the chicken for 6-8 minutes per side, or until it reaches an internal temperature of 165°F (74°C). For oven cooking, bake for 25-30 minutes, flipping halfway through.
  6. Baste the chicken with the remaining marinade every 5 minutes during cooking for extra flavor.
  7. Once the chicken is cooked, remove it from the heat and let it rest for 5 minutes before serving.
