Instructions

  1. Heat olive oil in a skillet over medium heat. Add the sausages and cook until browned on all sides and nearly cooked through. Remove and set aside.
  2. In the same skillet, melt butter. Add sliced onions, salt, and pepper. Cook for about 10 minutes, stirring occasionally, until onions are soft and beginning to caramelize.
  3. Sprinkle flour over the onions and stir well. Cook for 1–2 minutes to remove the raw flour taste.
  4. Pour in the Guinness to deglaze the pan, scraping any brown bits off the bottom. Add beef broth and stir to combine.
  5. Return the sausages to the pan and simmer in the gravy for 10–15 minutes over medium-low heat, until sausages are cooked through and gravy thickens.
  6. Meanwhile, place the diced potatoes in a large pot of salted water. Boil until fork-tender, about 10–12 minutes. Drain and return to pot.
  7. Mash the potatoes with melted butter and warmed milk until smooth and creamy. Season with salt and pepper to taste.
  8. To serve, spoon mashed potatoes onto plates, top with sausages, and ladle over generous amounts of Guinness onion gravy. Garnish if desired.
