Description
This Irish Bangers and Mash with Guinness Onion Gravy recipe is a rich, hearty comfort food classic made with juicy sausages, creamy mashed potatoes, and a deeply savory Guinness-infused onion gravy. Perfect for St. Patrick’s Day or any night you’re craving traditional Irish pub fare.
Ingredients
Scale
- 1 tablespoon olive oil: for cooking the sausages
- 5 bratwurst sausages (or Irish sausages): main protein of the dish
- 2 tablespoons butter: for sautéing onions
- 1 large yellow onion, sliced: base flavor for the gravy
- 3 tablespoons all-purpose flour: thickens the gravy
- 1/2 cup Guinness stout beer: adds rich depth to the onion gravy
- 1.5 cups beef broth: balances the gravy’s flavor
- Salt and black pepper to taste: for seasoning
- 2.5 lbs gold potatoes, peeled and diced into 1-inch pieces: base for mashed potatoes
- 2 teaspoons kosher salt (or 1 teaspoon table salt): for boiling potatoes
- 1/4 cup butter, melted: for rich mashed potatoes
- 3/4 cup whole milk, warmed: gives creaminess to the mash
- Chopped parsley or green onions (optional): for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Add the sausages and cook until browned on all sides and nearly cooked through. Remove and set aside.
- In the same skillet, melt butter. Add sliced onions, salt, and pepper. Cook for about 10 minutes, stirring occasionally, until onions are soft and beginning to caramelize.
- Sprinkle flour over the onions and stir well. Cook for 1–2 minutes to remove the raw flour taste.
- Pour in the Guinness to deglaze the pan, scraping any brown bits off the bottom. Add beef broth and stir to combine.
- Return the sausages to the pan and simmer in the gravy for 10–15 minutes over medium-low heat, until sausages are cooked through and gravy thickens.
- Meanwhile, place the diced potatoes in a large pot of salted water. Boil until fork-tender, about 10–12 minutes. Drain and return to pot.
- Mash the potatoes with melted butter and warmed milk until smooth and creamy. Season with salt and pepper to taste.
- To serve, spoon mashed potatoes onto plates, top with sausages, and ladle over generous amounts of Guinness onion gravy. Garnish if desired.
Notes
- Use Irish sausages if available for a more traditional flavor.
- Replace Guinness with beef broth for a less intense gravy.
- Add a dash of Worcestershire sauce for extra umami.
- Make ahead by storing mash, gravy, and sausages separately.
- Great with green peas, roasted carrots, or sautéed cabbage on the side.
